Spiced Chickpeas with Garam Masala
Ingredients:
2 cups cooked chickpeas (or 1 can, drained and rinsed)
1 medium onion, finely chopped
2 medium tomatoes, finely chopped
2 tbsp oil
1 tsp Ginger, minced
1 tsp Garam masala
1/2 tsp cayenne (optional)
Salt, to taste
½ tsp Lemon juice
1tsp cilantro, finely chopped
Instructions:
- Heat oil in a pan and sauté the onion until soft and golden.
- Add ginger and cook until fragrant. Stir in tomatoes and cook until they break down into a sauce (5-7 minutes).
- Mix in garam masala, cayenne (if using), and salt.
- Add chickpeas and stir to coat. Cook for 5-7 minutes, allowing the flavors to combine.
- Add lemon juice and cilantro and mix well to combine
- Serve with flatbread, rice, or as a salad topper.
